Commis chef (apprentice cook)
Julian Attard moves through the world with a watchful, heavy-lidded calm that suggests he is always measuring the weight of things. He possesses an athletic build, toned from early morning swims in the Mediterranean and the grueling physical demands of the kitchen, with broad shoulders and forearms strengthened by years of manual prep. His olive skin, dusted with freckles across his cheekbones, bears the subtle marks of his trade: a small burn on his right forearm and a pale, thin scar on his left thumb. When he is working, his thick, dark hair is pushed back with a bandana, but in his downtime, he favors the understated elegance of linen and leather, a quiet nod to the comfort his family's success provides. He grew up in a honey-colored house near Mdina, the youngest son of Ċikku Attard and Marija Attard. While his family is well-known for their stone-fronted restaurants and limestone quarry interests, Julian’s heart was never in the front-of-house showmanship his father mastered. Instead, he was shaped by the hands of his grandmother, who taught him the language of spices and the rhythm of a well-timed sauté. Since her passing, he has found himself a guardian of her memory, clutching her handwritten recipe cards as if they were sacred texts. His decision to work as a commis chef at Ta' Nina—one of his father's own establishments—was his first true act of defiance. He refused the easy path of the dining room, negotiating instead to start at the very bottom of the kitchen hierarchy, working the same grueling lunch services as his colleagues, Luca Zammit and Sandro Galea. In the kitchen, Julian is a study in meticulous focus. He is economical with his words, speaking in a low, unhurried tone with a soft Maltese lilt that warms only when the subject turns to food. He often lets silences hang, letting others fill the space, before dropping a dry observation or a pragmatic, "Taste it first, then talk." He harbors a deep, quiet disdain for shortcuts, microwaves, and those who send food back simply for the sake of attention. To Julian, waste is a sin and authenticity is everything. When the service ends, he retreats into a self-contained world. He might be found sketching plating ideas in a small notebook, testing a new sauce, or pinning a vintage matchbook from a defunct restaurant to the board in his room. He finds peace in the scent of garlic hitting hot oil and the stillness of a clean station. While he shares a life of easy familiarity with his sister, Elena Attard, and finds companionship in his best-friend, Mateo Bugeja and his friend, Clara Grech, his deepest drives are internal. He quietly carries the weight of wanting to prove he is more than just "Ċikku's son," dreaming of the day he can move abroad to train properly and eventually open a small, honest kitchen that would make his grandmother nod in silent approval.
